Gluten Free Banana Nut Bread made with Almond flour

Ripe bananas, almond flour, vanilla, eggs, hmmm starting to sound like a banana bread to me and not only that a gluten free banana bread. I figured if I can do a gluten free dessert that I will be able to bring it to events where I am asked to make something that just about any and everyone can eat it.

I do not like wasting food, so I dug in my cabinets and refrigerator to see what else I had that I can use in the bread. It did not take long at all to mix the ingredients and in fact as you probably can guess, the longest part was the cooking of the bread. Most of the ingredients are in the picture below, but I will cover it in detail in a second. I had received the earth balance from one of the word of month companies that I tend to get items from, the rest of the ingredients came from my local grocery store.

Gluten Free Banana Nut Bread made with Almond Flour

Prep Time: 15-20 minutes

Cook Time: 1 hour to 1 hour and 15 minutes

 

  • 1 1/2 cups Almond Flour
  • 4 eggs
  • 1/4 cup Earth balance (less fat than traditional oil)
  • 3/4 cup light or dark brown sugar (I used Truvia)
  • 3 medium bananas, mashed
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup slivered almonds
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt

 

  • Preheat oven to 350 degrees.
  • In a large bowl, mix all of the ingredients until there are no clumps.
  • Fold in the slivered almonds into the batter.
  • Lightly grease a 9 inch x 5 inch or similar sized loaf pan and pour in the batter.
  • Bake for 1 hour and 15 minutes or until toothpick inserted in the center comes out clean.
  • Remove from the oven and let cool completely before slicing up your masterpiece.
