Diabetes Health: Switch It Up Recipe Book

Many of us have someone in their circle that has Diabetes, and honestly it may be ourselves, but you find that you gt tired of eating the same boring food. If you want to find new and exciting ways to change it up, well Chef Corinne Trang has the perfect book for you, Switch It UpSwitch-it-up-book

I am not diabetic, but have been told that the numbers are close and if I do not change up that I can easily cross the line. I have and had many family members and friends that are/were diabetic and some have the same cry. I do not know what to cook or my food is not as tasty and good, but Chef Corinne has a solution to that.

There are several tasty recipes included and one the Curry Split Pea Soup (pg 38-9). Little prep and cooking time, and perfect for those ones with busy lives. I have included, with permission 1 great recipe:

APPLE CRANBERRY PECAN CRISP

SERVES 12

SERVING 1/2 cup

PREP 20 minutes

COOK 50 minutes

INGREDIENTS

8 large Granny Smith apples, peeled, cored, and chopped

12 ounces fresh cranberries

3/4 cup sugar, divided use

2 1/2 cups rolled oats

1/2 cup whole-wheat flour

1 cup crushed raw or roasted unsalted walnuts

4 tablespoons canola oil

2 tablespoons vanilla extract

Autumn’s colorful and glorious foliage comes around and I think crisp with one of the most delicious combinations, apple, cranberry, and walnuts. On the tart side with not too much sugar added, this crisp relies on the natural flavors of the fruit. One of the easiest desserts to make, it is also a perfect breakfast, including fruit, nuts, and rolled oats.

  1. Preheat the oven to 375˚F for 20 minutes. In a large rectangular baking dish (9 × 12-inch), add the apples, cranberries, and half the sugar and toss well. In a medium bowl, add the rolled oats, flour, remaining sugar, walnuts, canola oil, and vanilla extract. Mix well and scatter over the apples and cranberries. Bake until the apples are soft, the juices surface, and the topping is golden, about 50 minutes, covering midway with aluminum foil, if necessary.

Infertility is a challenge a lot of women, more than you know have issues with and I am in the boat as well. We are believing God and taking Him at His Word so we believe that this too shall pass and that hubby and I will be carrying our healthy bundle(s) soon. Until then, I will cover periodically our fertility challenges as well as cover the story of others and review books that I come across regarding it.

National Infertility Awareness Week: Of This Much I’m Sure Book Review

Nadine and Jamie were like any other married copy eager and ready to start a family, however due to some challenges Jamie experienced when he was younger they were unable to conceive naturally.

They decide to try a series of of infertility treatments that mess with her health and emotions (to which I can totally relate) and come to the point of threatening her life. I have not gone through IVF like them, but we came close but ran out of money.

Nadine describes straight from her heart the experiences and you feel like you are right there with her experiencing these difficulties. It is an easy to read book and one that women can relate to and I being one that have personally had over 5 miscarriages, can understand the pain she felt when seeing others around her mother children and she didn’t year after year.

Surprise surprise, when she becomes pregnant naturally. As great as this is, her unborn son was diagnosed with potentially terminal kidney complications and this news is now proving to be bitter sweet due to the fact that they do not know how long they will have their child.

But love and hope prevails……

The town gets even more upset when he threatens to cancel the town’s annual Christmas celebration and soon thereafter all heck breaks lose..

Left for dead on the other side of the tracks, Matthew is cared for and nursed back to health by a young man named Clarence that manages to see the best in everything and at times it is a little annoying but kids tend to give people more chances than adults. You will see just that in this movie.

Clarence manages to change Matthews heart and at the same time just may change yours as well. It is certainly a feel good movie and great for around Christmas season.

Most of us grew up like I did using some form of cloth, spraying the area that needed to be cleaned with some form of cleaning solution and get to cleaning.

How to use:

Wet thoroughly and wring out all excess water. Fold into a pad and wipe.

Caring for the e-cloth:

A hot water rinse and that is all. Machine wash regularly in hot water and use a small amount of detergent (organic and non-toxic) and rinse well. Hang dry or tumble dry.

My take:

I cleaned the bathtub and it did work with just water. I was surprised due to the area that I was cleaning, however with a little elbow grease I was able to clean the bathtub. It appears that it will take the same amount of time to clean with or/ without a cleaning agent.

I sprayed some of my favorite stain remover on my hubby’s shirt and instead of what I usually do which is scrubbing one side of the collar to the other to aid in loosing the stains. I decided to use the Bump It Off product and it does make addressing the collars easier and faster. 2 Thumbs up.

Kitchen:

I used the side with the smooth bumps to clean the pan and it worked well, however I did notice that if it was not on a flat surface that the product was not effective. It would be more effective if the sides had the smooth bumps or bristles so when you are addressing a non-flat surface Bump It off is still working. Definitely cannot clean the inside of a cup/glass. 1 Thumbs up and 1 Thumbs down

I am a proud transplant from Michigan, the “D” in particular and very proud of it, but have found a new love, Atlanta. There was a time in which you would be able to listen to me and tell that I was not from Atlanta, but not so much anymore. In fact, people say that also about my hubby which is awesome. Atlanta is a great place and I do not mind being associated with it.

One of the things that I love from Michigan are the great professional sports teams that they have there and the great inexpensive food choices. I found after moving here that I am not missing out on either one by moving here. There are great professional sports teams in Atlanta, like the Falcons which were in the Superbowl, the Hawks who are currently in the championship and the Braves that will start their season this week in their new stadium.

Speaking of great food choices, Church’s Chicken, has been one of my staples and I was happy as can be when I saw that I can get the same great tasting okra in Atlanta as I did back in Detroit. Almost everytime and I mean everytime I go to Church’s I have to have okra. It is a no brainer.
